Rice – 1 cup
Water – 2 cups
Just AAAHARA Puliyogare Powder – 3–4 tbsp
Cooking oil (preferably sesame oil) – 1 tbsp
Mustard seeds – ½ tsp
Curry leaves – few
Dried red chillies – 2–3
Peanuts or cashews – as required
Jaggery (optional) – 1–2 tsp
Salt – to taste
Cook the Rice: Wash 1 cup of rice thoroughly and cook it with 2 cups of water. You can cook it in a pressure cooker (about 2 whistles) or in a pot (until soft and fluffy). Once cooked, let the rice cool slightly.
Tempering (Tadka): Heat 1 tablespoon of oil (preferably sesame oil for authentic flavor) in a pan.
Add mustard seeds and curry leaves. Let them splutter.
Add dried red chilies and fry for a few seconds.
Add peanuts or cashews and fry until they are golden brown and crunchy.
Add Puliyogare Powder: Add 3-4 tablespoons of Just AAAHARA Puliyogare Powder to the pan and mix thoroughly. Stir for 1-2 minutes to combine the powder with tempering.
Add Jaggery (Optional):If you like a slight sweetness in your Puliyogare, add 1-2 teaspoons of jaggery. Stir until the jaggery dissolves and combines with the tamarind and spice mix.
Combine Rice: Add the cooked rice to the pan and gently mix until the rice is well coated with the tamarind-spice mixture. Ensure the rice is evenly flavored.
